I know I know it is September but I had to get one more lavender recipe in. It’s still been in the 90’s here in North Carolina which means my lavender is still blooming. No complaints here! I loved how my last lavender cookies turned out so I knew I wanted to make another lavender cookie but this time I wanted CHOCOLATE!
If you missed my other lavender cookie recipe here it is, Lemon and Lavender Shortbread Cookies. They turned out delicious and Oh, so pretty! I love to make my food look pretty.
These cookies are so lovely and savory with each little purple fleck of lavender which pairs perfectly with the sweet coconut and white chocolate. This cookie is the perfect amount of sweet without being too heavy.
Ingredients
2 1/2 cups of all-purpose flour
1/4 cup of coconut oil
1 1/2 cups of granulated white sugar
2 tbsp of dried lavender
1/2 cup shredded sweet coconut
2 drops of lavender oil (optional)
1 tsp of vanilla
1 stick of butter at room temperature
1 cup of white chocolate chips
2 tbsp of cornstarch
1/4 tsp of salt
1 tsp of baking soda
2 eggs
In a bowl mix flour, salt, cornstarch and baking soda and set bowl aside. Take lavender and roughly chop then add sugar and lavender into mixer and mix. Add butter, egg, vanilla, lavender oil, and coconut oil and cream together until fluffy.
Slowly incorporate flour mixture into sugar mixture and continue mixing until dough starts to pull from the sides and all ingredients are incorporated. Then mix in shredded coconut and white chocolate chips.
Preheat oven to 350 degrees and spray baking sheet with none stick spray. Scoop into small balls and put on a baking sheet placing them about 1″ apart. Bake for 10- 12 minutes or until the edges of the cookies are golden brown. Allow cookies to cool on a cooling rack for 5 mins before serving.
I enjoyed these cookies with a cup of tea and they were quit delightful! I’m sure they would be good with a cup of hot coffee as well. These cookies are so easy but decadent. Something about lavender in a cookie, it just feels fancy and taste oh so pleasant!
I feel like although you could enjoy these cookies at any time that they belong on a table at a Wedding Shower, Girls Luncheon, Easter or Mother’s Day Brunch! These cookies are sweet and chewy! Who doesn’t love a chewy cookie?

Is there way to make these crispy?

Dale try removing the corn starch completely. That is what makes the cookies fluffy. You could also remove about 1/4-1/2 cup
Of flour to get a flatter, crispier cookie! Good luck! Hope this helps!
