Rosemary & Apple Cider Mini Muffins 

More fall goodies my friends! These are the perfect fall snack for the little ones. Packed with warm and earthy fall flavors! I have never baked with apple cider and it made these mini muffins super moist and oh so delicious! The cinnamon and rosemary are a nice warm addition and compliment the apple and oats in the muffins really well.
They are pretty simple to make. So put these on your fall baking list! The kids are SURE to love them! Well so are the adults but I made these for my little guy Bennett for an after school snack. They didn’t last long! 

Ingredients 

2 cups of all-purpose flour

2 sticks of soften butter

1 cup of sugar

2 eggs

2 tbsp of apple cider

1 tsp of baking soda

1 tsp of cinnamon

2 tbsp of fresh chopped rosemary

1 cup of shredded apple

1/2 cup of oats

1 cup of milk

1 tbsp of white vinegar

Ingredients for Glaze

1 cup of brown sugar

1/2 cup of apple cider

Yields: 48 mini muffins

In a large bowl mix flour and cinnamon and set a side. In a mixer cream together butter, apple cider and sugar. Then mix in eggs and beat well.  Grade the apple with a cheese grader and place on a paper towel and ring out all of the water from the apple. Place apple, oats, and rosemary into the batter and mix.   Incorporate the flour and cinnamon mixture. Then in a measuring cup add milk and vinegar and stir with a fork. Add baking soda and dissolve in milk mixture. Add to batter and continue mixing.Preheat oven to 375 degrees. Spray mini muffin tin with a non stick spray and fill each muffin tin 2/3 of the way full and bake for 10-15 minutes or until they are golden brown.   While the muffins are baking in a small bowl mix brown sugar and apple cider and set a side. When the muffins are done baking remove from oven and pour glaze right over the muffins still in the muffin tin. Dont be afraid to really cover the muffins in the glaze. The hot muffins will soak up most of the glaze. Making them even more moist and delicious! Serve them while hot! Make sure to remove muffins from tin while they are still warm or they will stick to the pan.These mini muffins are so easy to make! They are full of warm fall flavors and they are so cute! The perfect little treat to make in the kitchen with your little ones! They are sure to love these little minis! Bennett sure did!  Grow it. Pick it. Cook it. Eat it.
