Vanilla & Lilac Sugar Butter Cookies 

I wish this post was scratch and sniff because let’s be honest lilacs are one of the best scents of spring!!! So pleasant and fresh!

One of my favorite things in the spring is sowing seeds in the garden and smelling the Lilac scent being carried by wind. It’s so relaxing! A small breath of heaven really…

Who doesn’t LOVE fresh-cut lilacs sitting in a vase on the table in spring!! If you do not have a Lilac bush I highly suggest planting one!They are very low maintenance! If you think you do not have enough room for one, check into dwarf varieties they stay a lot smaller and work perfect for square-foot gardens!

TIP: DO NOT use lilac pedals that you are not sure if they have or have not been exposed to pesticide! 

Ingredients for the Butter Cookie: 

2 sticks softened butter

2 cups all-purpose flour

1/2 cup  lilac sugar

1/4 cup  confectioner’s sugar

1/2 tsp baking powder

2 egg yolks

1 egg white

Ingredients for Lilac Sugar 

1 cup granulated sugar

1 mason jar

1/3 cup lilac pedals

1 vanilla bean

Yields: 24 cookies

 

Directions:

  1. Start by making your lilac sugar. Slice vanilla bean down the middle and scrap beans into bowl. Add in sugar and lilac pedals. Mix well and transfer into air tight jar. The longer you let it sit in the jar the more lilac flavor will be achieved. Set aside.

2. Preheat oven to 350 degrees. In a mixer, cream together softened butter until smooth. Then add 1/2 cup of the lilac  sugar, baking powder, confectioner’s sugar, and egg yolks. Combined together on slow speed.

3.Then add flour all at once and mix on medium speed. Make sure not to over mix.The dough will start to pull from the sides of the bowl and when it starts to do so, press into a large ball. Cover and refrigerate for 45 minutes to an hour.

4.Flour your work space and your rolling-pin. After the dough has been chilled, shape into a rectangle and roll out your dough to about a 1/2 ” thick.

5. Use your choice of size and shaped cookie cutter. Cut the shortbread and put cookies onto a buttered baking sheet. Place in a 350 degree oven for 10-12 minutes. Watch your cookies carefully you don’t want the edges browned.

6.Carefully place onto a cooling rack. Take your egg white and brush on to tops of the cookies and sprinkle the remaining 1/2 cup of lilac sugar onto the tops of the cookies! Serve with a glass of milk and Enjoy!

These cookies were a unique and tasty treat! The smell and taste are lovely!

TIP: The pedals in the sugar will eventually turn to a brown! So for presentation purposes I recommend waiting to place the lilac sugar on the cookies until right before serving. Keep the lilac sugar in an air tight jar.
