Crock-Pot Pumpkin & Sweet Potato Chili 

 Happy Halloween Y’all!! Here is an easy and festive meal to put in the crock-pot this afternoon and enjoy during your Halloween festivities tonight!A delicious twist on sweet potato chili! I usually make this sweet potato recipe minus the pumpkin puree and pumpkin spice but it was a yummy addition to this chili and I recommend going for it! Add the pumpkin and pumpkin spice! Live a little! The pumpkin pairs nicely with the sweet potatoes and the pumpkin spice brings a warmth to the chili. This recipe also calls for Pickled Jalapenos from the garden! These are optional but if you like some heat with your chili they are a great addition!  Ingredients 

2 sweet potatoes peeled and chopped into cubes

1 can of  rinsed black beans

1/4 cup of pickled jalapenos

2 16oz cans of crushed tomatoes

1 cup of pumpkin puree

1 1/2 tbsp of pumpkin spice

2 tbsp of chili powder

1 onion chopped

2-3 cloves of garlic

1 tsp of cumin

1 cup of water

1/4 cup of fresh oregano

1/2 cup chopped pecans

1/2 cup sour cream

Yields: 4 servings

Start by peeling potatoes and chopping them into cubes. Chop garlic and onions. Roughly chop pickled jalapenos and oregano.  Add all the ingredients into a crock-pot on high and stir together. Allow to cook for  2-3 hours or until sweet potatoes are tender. If you don’t have 2-3 hours to cook the chili, you can of course cook it in a pot and have it ready to eat in about 45 minutes to an hour.

If your going to prepare it in a pot on the stove start by drizzling some olive oil in a pan over medium heat and saute onions, garlic and potatoes for about 5 minutes.
Then add tomatoes, jalapenos, black beans, oregano, pumpkin, pumpkin spice, cumin, and chili powder. Stir together and allow to simmer for about 45 minutes to an hour or until potatoes are tender. Stirring occasionally.   Ladle into bowls when ready to serve. Top with chopped pecans and a dollop of sour cream and indulge!   This chili is savory and hearty! A perfect meal to warm you up! It’s super simple and full of delicious fall flavors. A wholesome meal to feed to the family before y’all go and indulge in all those candies and sweets!  I hope everyone has a fun and safe Halloween!
