Hello Friends! It’s been a while! My family and I’s new year has been off to a rough start. Lots of illness in this house! Which resulted in taking a break from blogging but things seem to be settling back down thankfully! Anyways, everyone knows that in January people are always looking to eat super healthy! I’m no different! With the holidays and all the high calorie food and drinks behind us it’s always nice to get back on track.
I thought I would share with y’all these super simple and tasty shrimp bowls I make! Just 6 ingredients and about 10 minutes to make!
I just plucked the last of the spinach out of the garden! I love me some wilted spinach from the garden! Which means the gardening season is over in NC.😔 January and February are the only two months I can’t garden here. Okay, I’m ready for spring now!🌷
Ingredients
1 bag of large shrimp
1 red onion
6 cups of fresh spinach
2 cans of white beans
1 tbsp of olive oil
2 garlic cloves
Yields: 4 servings
1. Start by washing, deveining and taking the tails off the shrimp then set aside. Wash spinach and set aside.
2. Chop red onion, peel garlic cloves and chop. In a skillet over medium – high heat add olive oil, garlic and onions. Cook for 3-4 minutes or until onions are translucent.
3. Now add shrimp cooking until they start to turn pink. Then add spinach and keep stirring until wilted completely. Cook 5 minutes or until shrimp are cooked all the way through.
4. Open, drain and rinse your beans and add to the skillet. Give it a couple good stirs until the beans are warm and you’re ready to eat!
Serve warm and if you would like you can serve it with a lemon wedge. I love these shrimp bowls they quick, simple, healthy and tasty! They are a win win in my book!
